An Independent Guide in the Making
Hainanese Chicken Lab is an English-language editorial project about one remarkable plate and the techniques behind it.
“Lab” describes the method
We record variables, publish testing status, and correct the work. It is not a claim that this site operates a scientific laboratory.
The project begins with source research. A method moves to Kitchen-tested only after it has been cooked using the displayed quantities and steps under documented home-kitchen conditions.
What this site is—and is not

Author identity before launch
The production edition will publish a real public name or pen name and a truthful explanation of the author’s relationship to the cooking and research. This prototype does not invent a chef biography, family legend, or inherited “secret recipe.”
