How to Make Fragrant Hainanese Chicken Rice
The rice should taste savory and aromatic before any sauce touches it. Frying the grains with chicken fat, ginger, and garlic builds flavor; chicken broth and pandan carry it through the pot.

Ingredients for 4–6 servings
- 300 g / 1½ cups jasmine rice
- 3 tablespoons rendered chicken fat or neutral oil
- 20 g fresh ginger, finely minced
- 4 garlic cloves, finely minced
- 2 scallion whites, finely sliced
- 420 ml / 1¾ cups low-sodium chicken broth
- 2–4 pandan leaves, tied in a knot, optional
- ½ teaspoon fine sea salt, adjusted to the broth
Stovetop method
- Rinse the jasmine rice until the water is mostly clear, then drain for at least 10 minutes.
- Warm the chicken fat in a heavy saucepan over medium-low heat. Add ginger, garlic, and scallion whites; cook until fragrant without browning.
- Add the drained rice and stir for 2–3 minutes so the grains are evenly coated.
- Add broth, pandan, and salt. Bring to a simmer, stir once, cover tightly, and reduce the heat to low.
- Cook for about 15 minutes without lifting the lid. Remove from the heat and rest, still covered, for 10 minutes.
- Remove pandan and fluff gently from the bottom upward. Taste before adding more salt.
For a rice cooker, sauté the aromatics separately if the cooker lacks that function, then transfer them with the rice and use the cooker’s normal jasmine-rice liquid level.
Why these ingredients matter
Chicken fat
It gives the rice its characteristic poultry richness. Neutral oil works but tastes lighter.
Chicken broth
Use broth that tastes pleasantly seasoned on its own; an overly salty broth concentrates as the rice cooks.
Pandan
It adds a soft grassy, vanilla-like aroma. Unsweetened frozen pandan is a practical substitute; otherwise omit it.

Fix the texture
| Result | Likely cause | What to change |
|---|---|---|
| Greasy | Too much fat | Reduce fat by 1 tablespoon next time |
| Gummy | Excess liquid or vigorous stirring | Drain rice well, reduce broth slightly, and fluff gently |
| Hard center | Too little liquid or heat escaped | Add a splash of hot broth and steam covered for a few more minutes |
| Flat flavor | Weak broth or low seasoning | Season the broth before it goes into the pot |
